I am using Java + Spring boot(Ver 2.1.16) + Hibernate + JPA for an API project.
I have several models with several OneToMany relationships.
I haven't mentioned a fetch type but as I know it's Eager in default according to my used Hibernate version.
I have mentioned #Transactional in my service method also.
All good when I get data calling to the API endpoint via Postman (I receive all fields including OneToMany) without any exception.
But when I call the service method via Unit tests, I get following exception.

What can be the issue?
When you call the rest API using postman, it works because Spring Boot offers a feature called OpenSessionInViewFilter which open a hibernate session for the current session of your HTTP request. When you call the service method directly by the test method without being annotated by #Transactional, the lazy fetching does not work because there is no hibernate session opened.
I could resolve the issue after adding
#Transactional
to my Test methods also

The only reason for NPE if it happens at the line of code you mentioned above is serviceTask is null.
If you're not using the correct test runner which can help you to initialise the mock instance, then you can actually initialise them manually in your setUp method by using MockitoAnnotations.initMocks(this);
But if you already did so or used the correct test runner, then probably you linked to a wrong line of code. Try to debug yourself again.
Your stack trace doesn't look like it caused from your linked line of code.

How do I lazily load a collection from my service method?
In your situation, if you always iterate your collection,
so i think you should avoid to use the lazy load because it causes N+1 problems and might impact to your performance.
Advanced solution: you should use "entity graph" in jpa 2.2, to load what you need.
For simply solution, just make sure collections is loaded by calling collections.size() in the same transaction.
No transaction anti pattern may be quite dangerous in my opinion. So avoid to use

Hibernate 5.2 supports added in Spring framework 4.3 , that its stable version will be available in next week.
Spring 4.2 only supports Hibernate up to 5.1.

The issue is related to the versions only.
Use Hibernate version 5.1.0 with Spring 4.3.7. It will solve this issue.
Add the below dependency along with Spring framework dependencies of version 4.3.x .

AUTO The Session is sometimes flushed before query execution in order to ensure that queries never return stale state.
COMMIT The Session is flushed when Transaction.commit() is called.
MANUAL The Session is only ever flushed when Session.flush() is explicitly called by the application.
NEVER Deprecated. use MANUAL instead.
