I want Eclipse to automatically suggest to me all possible options, while I'm writing some variable/class name or keyword, like in Flash Develop or Visual Studio.

Use the Ctrl+Space shortcut for getting all possible autocomplete options available in a particular context in the editor.
Auto Complete will also allow you to insert custom code templates into the editor, with placeholders for various inputs. For instance, attempting to auto complete the word "test" in a Java editor, in the context of a class body, will allow you to create a unit test that uses JUnit; you'll have to code the body of the method though. Some code templates like the former, come out of the box.
Configuration options of interest
Auto-activation delay. If the list of auto complete options is taking too long to appear, the delay can be reduced from Windows -> Preferences -> Java -> Editor -> Content Assist -> Auto Activation delay (specify the reduced delay here).
Auto activation trigger for Java. Accessible in the same pane, this happens to be the . character by default. When you have just keyed in typeA. and you expect to see relevant members that can be accessed, the auto completion list will automatically popup with the appropriate members, on this trigger.
Proposal types. If you do not want to see proposals of a particular variety, you can disable them from Windows -> Preferences -> Java -> Editor -> Content Assist -> Advanced. I typically switch off proposals of most kinds except Java and Template proposals. Hitting Ctrl+Space multiple times will cycle you through proposals of various kinds.
Template Proposals. These are different from your run of the mill proposals. You could add your code templates in here; it can be accessed from Windows -> Preferences -> Java -> Editor -> Templates. Configuration of existing templates is allowed and so is addition of new ones. Reserve usage however for the tedious typing tasks that do not have a template yet.

Since you asked about other Java IDE, I suggest IntelliJ by JetBrains.
Just look at it: not only does it support auto completion as you type, but also it support import package once you select the auto completion.

Pressing Ctrl+Space opens up the auto-completion dialog in Eclipse. In the Java Perspective it opens automatically after you typed a . (normally with a short delay).

Add the character SPACE by just putting your cursor inside and box and push the space key..

I have seen people on YouTube programming Java with the Eclipse editor, and they have a pop up that tells them all acceptable ways to finish your function.
i.e. if you type System.out., it will show a list of every possible thing you could write after System.out, such as print, println, etc.
Please tell me how to enable this feature.

When, for instance declaring a new integer variable in java let's say int number=7; if I write in Eclipse a., it does not appear on the right all the possible attributes that could be used, as it should do. I have tryed installing a new version of Eclise but it does not make any difference. Does anyone know how to fix this?

If i understood you well, here is the solution for autocompletion:
Window -> Preferences -> Java -> Editor -> Content Assist -> Advanced
You click restore default and that should be it.
I use Eclipse for Java development. I like the auto-activation feature because I can add all the letters and numbers so I can see class members while I'm typing; making it behave similarly to Visual Studio. If I don't add all of the letters and numbers to the auto-activation list, it will only pop up with class information when I'm typing the first letter after the '.' delimiter, and then it disappears.
The real problem arises when I'm typing in a variable name or something else. As soon as I hit space, the auto-complete types a bunch of crap following what I've typed in attempt to complete it. It's driving me crazy!
Any way to turn this off?
The checkbox you have to check is: "Disable insertion triggers exept 'Enter' "

Open menu Window, then Preferences. Follow path Java -> Editor -> Content assist. Now mess around with the settings to find your ideal setup. I believe what you'll want is to deactivate Insert single proposals automatically.

This worked for me although I am sure there is another and a better way.
Window -> Preferences -> Java -> Editor -> Content Assist -> Set Auto Activation Delay(ms) : 200ms from 0ms in my case.
You may want to increase/decrease the value 200 depending on your typing speed.
The reason this worked is because of the hitting of "Spacebar" before the delay arrives.

I'm using IntelliJ IDEA 9, Is there a way to configure IDEA so that when I pause my mouse over a method, IDEA pulls up the javadoc (the same thing as CTRL+Q does)?
Just to update, IntelliJ 13.0 is now released and has this feature.
Location in 13.0:
Preferences -> Editor -> Other -> "Show quick doc on mouse move"
Location in 13.1 (and later):
File -> Settings -> Editor -> General -> "Other" section -> "Show quick documentation on mouse move"
You can even set the hover time (in ms) and once the doc pane opens, you can Pin it to one of the sides and it becomes one of the windows, like Console or Terminal. This is very handy, as you just over over and look at the pinned window.
There is no such feature right now, feel free to vote for the existing enhancement request.
As stated in the comments, one can write a plug-in that will add this functionality.

Since this is the first hit on Google about this I would like to add that Edolsa's answer here is the correct solution as of January 2014.
There is a setting under Preferences -> Editor -> Show quick doc on mouse move, but I've found it's completely unusable. It shows the quick doc for all variables so when you're hovering over to find out what a variable's value is the quick doc blocks it. Also most of the time the doc is collapsed and it's a pain to get to the right hand corner without it disappearing to expand it. Needs work, doesn't work nearly as well as it did in Eclipse.
I'm migrating to Android Studio. I miss this Eclipse feature too.
I created a new shourtcut for Quick documentation command: Alt + Left click

I was curious if anyone knows a way (by using a setting or a plugin or something), that would allow me to select variable names on the fly in netbeans, in the same way that Visual Studio 2008 does using an automatic popup window? At the moment I can access them by pressing Ctrl + Space, but I wondered if there is a way that I could avoid this and just have them come up automatically as I type, and the methods would come up with the '.' operator as normal?
The settings in 'Tools->Options->Editor->Code Completion' doesn't seem to have the Ctrl + Space setting I'm looking for, only a tickbox for toggling the normal '.' code completion of method names on or off..

This looks like it was a commonly requested feature for NetBeans, added back in 2009. The setting appears to be Tools -> Options -> Editor -> Code Completion -> Auto Popup Completion Window in those builds (discussion; see also).
The feature you're asking about from Visual Studio is IntelliSense, by the way. If you're looking for a terrific, IntelliSense-drive IDE for Java, you might want to consider IntelliJ.
In NetBeans preferences, choose the code completion; then chose Java instead of all languages; and then choose all the options. You will get it. Goodluck.
