I'm trying to add Spock framework to my spring boot project, but I can make it work. I added those dependencies:

I'm not familiar with Spock, so I'm not sure if there is any other dependency I should add or any other configuration. Also I'm not sure I should be adding EdoobyApiApplication at the #SpringBootTest. If someone could give me a direction to look for would be great.

This isn't a Spock or Spring problem.
Java will throw a NoSuchMethodError if the runtime method signature doesn't match the signature of the method when the class was compiled. Another compile vs runtime mismatch is the NoClassDefFoundError.
In this case, it appears the version of Guava providing the com.google.common.base.Preconditions.checkState method the Springfox springfox.documentation.spring.web.scanners.CachingOperationReader class was compiled against doesn't match method signature of the method in the runtime (or possibly test) classpath.
You should run mvn dependency:tree -Dverbose -Dincludes=com.google.guava:guava, as documented here. Once you find which dependency(ies) are bringing in a version of Guava that conflicts with the version Springfox needs, you can add an exclusion to that other dependency(ies), or add an explicit dependency in your project with the version Springfox requires, to ensure the runtime/test classpath contains a compatible version.

I'm trying to setup a simple spring-boot example project (keycloak tutorial) but I'm stuck at a startup error. The only thing that differs from the original config is that I want to use an undertow server instead of tomcat.
Running the main class without any changes is successfull (main class annotated with #SpringBootApplication) (mvn spring-boot:run after clean & install) (standard tomcat setup).
After the following changes in the pom, I'm getting an error:

When I just upgrade to Spring Boot 2.2.1, this exception doesn't occur.

So my question is, why do I suddenly need to manually add a dependency after this Spring Boot upgrade.
I would look at your dependencies which might use xml as configuration. I am using Spring Boot 2.3.1 and did not need this dependency until I added Liquibase support. Since I was using xml for the Liquibase configuration then I see same error at startup. Once I added this dependency then error went away.
Assuming your application is using / including Liquibase, this occurs because of an erroneous file in liquibase-core which is defining an SPI extension for a Jackson module but not providing the implementation for that module: https://github.com/liquibase/liquibase/issues/1051
The workaround listed in the OP is sufficient, as its providing the implementation to the Jackson module referenced in the SPI file, but you can also upgrade Liquibase to >= 3.10.1 to resolve this (I only tested 3.10.3 but according to the linked defect 3.10.1 should work)

I want to test GraphQL for a future project. The project will use Spring Boot, Spring Security, and GraphQL. So I created a new Spring Boot App in IntelliJ using the build in Spring Initializr. The Spring Boot version is, of course, the latest (2.0.3.RELEASE)
Now I add the dependencies for GraphQL and GraphiQL.

So I don't know what happened but I think GraphQL can not map the Query type to the QueryResolver. But why?
When checking the internet, I read that Spring Boot Version is the reason. So I tested it with Spring Boot 1.5.8.RELEASE, without result.
However, when using an older GraphQL version (4.3.0 and 5.2.0) with Spring boot 1.5.8, it did seem to work fine. So then I tried to use these older GraphQL versions with the new Spring boot version, but then I get another exception:

You're creating your resolver beans twice. Both your MutationResolver and QueryResolver are annotated with #Component, which means that Spring will create an instance and register it. However, within the GraphqlApplication you also created beans for both resolvers using the #Bean annotation.
This causes an issue, because the GraphQL library will look for a proper resolver for greetingsAll, but it will find two resolvers due to your bean being mapped twice.
The solution is to either remove the #Component annotation, or to remove the following bean configuration:

My solution: I delete dataSource() method from DatabaseConfig.java. Then, the application was started successfully :)

Spring Boot 2.x.x changed default JDBC connection pool from Tomcat to faster and better HikariCP. Here comes incompatibility, because HikariCP uses different property of jdbc url. There are two ways how to handle it:

Also, if you happen to have Hikari on the classpath, this basic setup does not work, because Hikari has no url property (but does have a jdbcUrl property). In that case, you must rewrite your configuration as follows:

By setting up the dataSource yourself (instead of using DataSourceBuilder), it fixed my problem which you also had.

I also read the Spring docs, as lapkritinis suggested - and luckily this brought me on the right path! But I don´t think, that the Spring docs explain this good right now. At least for me, they aren´t consistent IMHO.
The original problem/question is on what to do, if you upgrade an existing Spring Boot 1.5.x application to 2.0.x, which is using PostgreSQL/Hibernate. The main reason, you get your described error, is that Spring Boot 2.0.x uses HikariCP instead of Tomcat JDBC pooling DataSource as a default - and Hikari´s DataSource doesn´t know the spring.datasource.url property, instead it want´s to have spring.datasource.jdbc-url (lapkritinis also pointed that out).
So far so good. BUT the docs also suggest - and that´s the problem here - that Spring Boot uses spring.datasource.url to determine, if the - often locally used - embedded Database like H2 has to back off and instead use a production Database:
You should at least specify the URL by setting the
spring.datasource.url property. Otherwise, Spring Boot tries to
auto-configure an embedded database.
You may see the dilemma. If you want to have your embedded DataBase like you´re used to, you have to switch back to Tomcat JDBC. This is also much more minimally invasive to existing applications, as you don´t have to change source code! To get your existing application working after the Spring Boot 1.5.x --> 2.0.x upgrade with PostgreSQL, just add tomcat-jdbc as a dependency to your pom.xml:

If you need to configure multiple data sources, you have to mark one of the DataSource instances as #Primary, because various auto-configurations down the road expect to be able to get one by type.
If you create your own DataSource, the auto-configuration backs off. In the following example, we provide the exact same feature set as the auto-configuration provides on the primary data source:

This answer seems also to apply to your problem description/exception message: You have a conflicting javax.validation version!
Hint: I prefer Netbeans' "Graph View" (of a pom editor) for identification & elimination of dependency conflicts (especially after some version upgrade). The "pure-maven-way" would be:

for my case, it was due to the spring mvc version from spring boot starter web not compatible with spring data.
and the exception could be really tricky, where there are two constructors for AbstractMethodError, while the first one is default without any parameter. So depends on the implementation, if they throw exception using first constructor, would require a lot hard work for debugging.
