I'm trying to add a JComponent onto a Jpanel whenever I switch my selection for daysOfTheWeek comboBox. However, it doesn't seem to work, but only works when I put it ouside of theactionPerformed(ActionEvent e) method. What am I doing wrong? Here is my simplified code:

Generally, you design a Swing GUI so that you create all the Swing components once. Then, you update the values of the Swing Components.
Generally, you create a Swing GUI from the inside out. You define your Swing components and JPanels and let the JFrame size itself.
Here's a GUI I came up with, based on your GUI.
I use a JFrame. The only time you should extend a JFrame, or any Java class, is when you want to override one or more of the class methods.
I created two separate JPanels, one for the JComboBox and one for the JTextArea. I added a JButton to the combo box panel so you could select the same day more than once. I used a JTextArea so I could define one Swing component and append the text.

I have kept a Button over a Combo box because for me Coloring button is much easier than Coloring Combo box and I want that when the button is Clicked, all the Combo Box elements should Display. I have kept the combo box and button in Layered Pane and Layout is Absolute Layout.

I seem to not be able to find a way to get my code to work.
I am making a program and until now everything was working, i have some buttons and they do what they should.
But now i added a button that when a user click it, it should close the current GUI and open a new one.
I also want to point out that i created a new class for this new GUI.
The other GUI class that i want to call is the GuiCrafting, in that class the GUI is also all coded, and works if i call it on the Main.
My question is what do i type here (I tried a lot of things like dispose() etc but i just get error messages) :

Perhaps what you want to use is a CardLayout which manages two or more components (usually JPanel instances) that share the same display space.

Good to see you learning Java! A few things I should point out.
Firstly, your variable names are good, but they don't follow the Java naming convention. Even though it seems small, it's just good practice to follow.
Of course, your actual problem; the action listener you've implemented is on the JFrame. (See how you extend JFrame and implement ActionListener?) This ActionListener should be on the button. You'll can do this a few ways.
Method 1: By adding it inline with your code

I bet that your program just shows nothing, isn't it? That's because in addComponentsToPane method, you didn't add any component but empty JPanels. After the comment //Adding Components to GridPanel, you should:

Then, to listen to button event, you should also add :
HeightIncrease.addActionListener(this);
HeightDecrease.addActionListener(this);
"this" is because your frame JFrameSetUp implements ActionListener, so when either bootton is clicked the method actionPerformed is invoked.
As JLabel.setText method will repaint itself and consequently its component hierarchi is repainted as well, you haven't to do anything othr.

Create the GUI on the event dispatch thread
Don't extend JFrame (you have three (three!) JFrames floating around there!)
Follow the naming conventions
Don't overuse static methods
Only store the instance variables that you really need to represent your class state
Don't use manual setSize or setBounds calls. Use a LayoutManager instead
The call to frame.setVisible(true) should be the last call, after the frame has been completely assembled
Consider a CardLayout for switching between panels ( http://docs.oracle.com/javase/tutorial/uiswing/layout/card.html )

You should use a JButton and not a JLabel. Then:
you add to your JButton : Your_JB.addActionListener(this); (don't forget to implement ActionListener to your class).
Now, we are gonna add the detector:

With this code they are set in the center of the view aligned horizontally.

The thing is you're not using any layout managers. The default layout manager for JPanel is FlowLayout, which will do exactly what you're experiencing (horizontal layout of the components).
Getting vertical alignment could be achieved by using different layout managers. You could use a GridBagLayout for all the component, or a GridLayout, or you could nest JPanel with different layout managers. The possibilities are endless. It just comes down to the exact look you want.
See Laying out Components Within a Container to learn how to use different layout managers. I'll give you an example, but don't let it stop you from looking at the tutorials. You need to learn them.
Also besides just positioning of the components layout managers use dynamic sizing either by respecting the preferred of components are not respecting them. You can see a picture in this answer of some of the layout managers that do and don't respect preferred sizes.
